1½ cups fresh or frozen blueberries
Juice of ½ a lemon
1 tbsp chia seeds
1 tbsp water (optional, if needed for consistency)
1–2 tsp monk fruit sweetener
Preparation
Instructions:
Place blueberries in a small saucepan over medium heat.
Stir occasionally until the berries begin to pop and soften (5–7 minutes).
Gently mash some of the berries to create a thick texture.
Add lemon juice and sweetener. Stir well.
Add chia seeds and let simmer another 3–5 minutes until thickened.
Remove from heat and let cool. It will continue to thicken as it sets.
Store in a clean jar in the refrigerator for up to 1 week.
